I’ve had a request for some easier recipes…things that someone can just throw together without a whole lot of culinary know-how.

To be honest, there are a couple of recipes I’ve already posted that would fall under this category, but I’ve dressed them up to make them appear more impressive than easy. A perfect example is microwave egg whites. I posted Microwave Chorizo Scramble, but it’s really just the recipe below with chorizo and a more specific cheese.
That being said, the recipe below is perfect for absolutely anyone looking to add protein to their day without adding fat. The hardest part is separating the egg whites from the egg yolks, and even then, you can purchase egg-white-only cartons from the store.
In the future, I’ll try to note when recipes are really simple to make. However, simple doesn’t always mean quick. I’ve made a lot of complicated foods quickly, and made a lot of easy meals that took hours. This recipe just happens to be both simple and quick…which is a perfect combination for dieters looking for a healthy snack that will improve their day, rather than hurt it.
To make a more complete breakfast, serve on a piece of toast!

Yields: 1 serving
Cook time: 1½ minutes
Ingredients:
3 egg whites (or ½ cup)
1 Garlic & Herb Laughing Cow light cheese wedge
pinch of Tex-Mex Grinder seasoning, or cracked pepper blend
Put all ingredients in a mug. Microwave on high for 1 minute. Stir. Microwave for another 30 seconds or until eggs are cooked.
Side note: Do NOT use egg yolks in this recipe. Your kitchen will smell like burnt rubber for a couple of hours…or more. Don’t ask me how I know.
